This is the typical recipe for a Spanish omelette. On it we will explain step by step how to cook the tortilla and the ingredients needed for it. The recipe is designed for six people.

500 grams of potatoes
5 eggs
1/4 Olive oil

Start by peeling the potatoes, wash them and and cut them into thin slices. Heat the oil and toss the potatoes, some salt and fry everything until the potatoes are tender and lightly browned.  Take out them from the pan and put them aside (it is important that they are well drained).

Beat the eggs in a bowl with a little salt and add the fried potatoes that we have previously fried, mixing them well with the egg.

We take a pan and put two tablespoons of oil to cover the bottom. When the oil is hot, toss the egg and potatoes mixture. Move the pan very carefully with a fork until it begins to curdle, then shake the pan slightly and wait until is well cook. When we see that has curdled, we put a lid over the pan and flip the tortilla over, so we will have the curd on top. We will put the pan on the heat again so the other side can curdle too. We move the pan a little again until we see that each side is cook. This can be repeated again depending on how we prefer the tortilla.

Enjoy your meal!
