“Cocina en” recipe: a healthy vegetable stew

Here is the recipe…

INGREDIENTS

6 artichokes
250 gr. of peas
250 gr. of broad beans
A bunch of asparagus
100 gr. ham in a thick slice
2 green onions
2 carrots
1 clove of garlic
1 egg
Olive Oil
1 cup water or vegetable broth
salt

PREPARATION

Boil separately the different vegetables in salted water. Vegetables should be “al dente“. Drain them and cool them under cold water to stop the cooking process.

Cook the egg in water for 10 minutes (so it is hard). Put it under cold water.

Spray a clay pot with oil. Heat the oil and brown the garlic. Remove the garlic from the clay pot. Cut the ham into cubes and deep fry in olive oil. Remove the ham once it’s fried.

In the same oil fry the onions cut in slices. Once the onion is poached, add the boiled vegetables. Add the ham again.

Sprinkle 1 flour tablespoon above it and allow it to absorb the flour for a couple of minutes without stirring. Add the cup of water or broth. Cook everything up for about 10 minutes to blend the flavors.

Season with salt.

Garnish with the egg. Serve hot.
