As the warm weather is coming, there’s nothing better than a refreshing and healthy gazpacho.

INGREDIENTS

6 ripe tomatoes
1/2 small cucumber
1 piece of green pepper
1 clove of garlic
2 slices of bread
3 tablespoons of oil
1 tablespoon of vinegar
salt

PREPARATION

Take the bread, remove the crust from it and cut into cubes. Pour it into a jar. It’s time to clean the tomatoes, removing the stems from them. Then, chop them and add them to the jar. Peel the cucumber (reserving a piece), the garlic clove and the green pepper, chop everything and put it into the jar. Pour 1/2 l of water, oil and vinegar on it. Season it and blend the ingredients until it became a smoothy cream.

Strain the cream and put it on the fridge (1 hour minimum) for it to cool off. Serve the gazpacho in a bowl and threw chopped the cucumber we reserved before all over it.
