The owner, Anna Bellsol\u00e0, who is a Catalan native, was born into a family of bakers from 3 generations before her, so flour is practically in her genes. Before Baluard\u00a0opened in 2007, many locals would claim that good bread in Barcelona was a lost art, just a beautiful nostalgic and aromatic memory. It was a dark time for bread aficionados in the city.\u00a0The craft of baking had been seemingly lost, that is, until Baluard\u00a0came to the rescue. Thankfully there are now <\/span><span class=\"removed_link\" title=\"http:\/\/baluardbarceloneta.com\/en\/tiendas\"><strong>four<\/strong><\/span><span style=\"text-align: justify; font-size: 16px;\">\u00a0Baluard locations in the city.<\/span><\/p>\n<p style=\"text-align: justify;\">Apart from passion, there are many <a href=\"https:\/\/www.shbarcelona.com\/blog\/en\/ecological-products-barcelona\/\" target=\"_blank\" rel=\"noopener\"><strong>ingredients<\/strong><\/a> and a lot of science that are necessary for the optimal loaf of bread. For those who have ever tried to bake bread, you know that baking a good loaf of bread is a triumph, and baking an average loaf of bread is the more common result. Baluard is different because their\u00a0bread is labored over, without lamentation, but rather, fermentation. The fermentation process takes about 15-18 hours, and there is no machinery or assembly line used to make these hand-crafted pouches of heaven. Two other popular Catalan bread, but with a Baluard twist is the Pan de\u00a0Pag\u00e8s, and the Paneto de cereals. The croissants are divine, some of the best I&#8217;ve had in the city, and make for a perfect breakfast on the go. The bread not only looks different, it smells different, obviously tastes different, and even feels different.
